Tradition says the coconut Laddus are supposed to be made with freshly grated coconut and jaggery. That is because this was the most popular method in the Indian subcontinent. However, these amazing Laddus can be made using fresh, frozen or even desiccated coconut. Instead of jaggery, sugar or even sugar-free sweeteners can be used.

Before we get into the recipe, here are some preliminary tips to follow:

  • Choosing the coconut: When choosing the coconut, fresh coconuts are the way to go. But if you want, you can also use frozen or desiccated coconut. Don’t forget to use raw coconut if you are taking the frozen route.
  • Choosing the sweetener: For sweeteners, you can use sugar, jaggery, palm jaggery, condensed milk or a sugar-free alternative. In regards to flavor, Coconut Laddus made with jaggery win the race.
  • Flavoring: Use cardamoms or dried ginger powder or nutmeg to flavor the Laddus.
  • Vegan: For all the vegans out there, you can easily use coconut milk instead of regular milk.
  • Optional ingredients: For additional flavors, you can use khoya, milk powder, cashew nut powder and even sesame seeds.

Now, let’s look at the ingredients. To make some delicious Coconut Laddus, you will need: 

  • 2 cups of coconut.
  • Ghee: 1 teaspoon
  • Milk: 1 cup
  • ⅛ teaspoon of green cardamom powder.
  • 8 cashews in broken form.
  • ¾ cup sugar or ½ tin condensed milk or jaggery.

 

Directions: 

  • Firstly, heat 1 teaspoon of ghee in a pan. Add the broken cashew nuts and toast them by stirring often. Wait till the nuts turn golden. When done, set aside.
  • Add grated coconut, milk and sugar or any other sweetener. For desiccated coconut, set the pan aside for 15 minutes. This lets the coconut soften by absorbing the milk.
  • Mix all the ingredients and cook till the mixture thickens and all the moisture evaporates. Make sure the mixture is moist and not dry.
  • Add cardamom powder and nuts and mix well. Let the mixture cool slightly.
  • Next, scoop out small amounts and roll in your palms to make the Laddus.
  • You now have the perfect edible gift for any occasion. The laddus should be stored in an airtight jar and refrigerated. They will be fresh for up to 7 days.
